How to Make Mayonnaise at Home


2        egg yolks
1 tsp      salt
pinch     white pepper
1 Tbs      lemon juice
1 cup      vegetable oil


1. Whisk together yolks salt and ½ the lemon juice until smooth.

2. While whisking vigorously add oil 1 Tbs at a time until mixture starts to thicken. After the mixture has thickened continue to add the oil in a steady stream.

3. Finish by mixing in the remainder of lemon juice.
